Asian Salmon with Brown Rice Pilaf


Brown rice
1 Tbs olive oil
1/2 cup chopped onions
1/2 cup chopped red bell peppers
2 boil in bag brown rice
1/4 cup finely chopped parsley
salt and pepper to taste

Salmon
16 oz salmon fillet
1 Tbs olive oil
1 tsp minced garlic
1 Tbs minced fresh ginger
1 tsp soy sauce
1 tsp maple syrup
2 green onions chopped

Rice Cook rice as directed on package. In a large non-stick skillet add one Tbs of oil and saute onion and bell pepper. Place rice in bowl add sauteed vegetables,parsley and salt and pepper if desired, mix well and serve on large plate with salmon on top. Salmon Mix all salmon ingredients (except salmon) well and place in pie pan. Cut salmon into four equal pieces and place in a pie pan. Marinate salmon for 20 minutes. Place salmon and marinade in same skillet and cook over medium high till salmon is done.
